I recently made a pineapple upside down cake in a springform pan I've successfully used many times before in baking. This time, though, a lot of the brown-sugar butter topping oozed out between the bottom of the pan and the ring, resulting in a scorched layer of goo on the bottom of the oven that actually caught on fire. (The pan wasn't assembled incorrectly. Same recipe. If you wrap the bottom of the springform pan in foil and seat it on rimmed baking sheet, the bottom of your oven need never, ever become a fire hazard again. I am never confident enough to put a springform pan directly on an oven rack (as I can't be trusted to assemble the pan correctly). I am trying to re-create the German potato salad my husband's mother made, but I have neither Mom nor recipe to consult. I seem to have gotten the flavor about right but my husband says Mom's recipe had a "creamy" dressing. [For what it's worth, I've seen this "creamy" dressing on commercially prepared German potato salads, but their flavors are off. On a whim, I bought a huge bag of cornmeal to make cornmeal crust pizza. Other than cornbread (not a fan of) and cornmeal fritters, what can I do with this bag before it goes bad. I looked up some cornmeal cake recipes but nothing exciting. And I'd love to use it for a meal-but something that works in this heat. Hi, I plan to make Cook's Illustrated/America's Test Kitchen summer berry trifle recipe this week for a dinner party. It's called "summer" berries and I'm sure it'll be great with local, berries once in season, but will my dessert be a disaster if I use berries from the supermarket (probably from California. There's sugar in the recipe, so please tell me summer berries are not essential. You'll be much happier making the trifle recipe when local berries are in season. BTW, I just was in San Francisco, and I can tell you that the sweet, juicy, perfect strawberries they have now (in season) in California and the gigantic, too-firm, white-on-the-inside Driscoll's berries that we get from CA might as well be from... Par-boiled grains are a great option -- I've seen mention of these from TJ's and have been meaning to get my hands on them. Par-boiling shouldn't remove any of the fiber or other nutrition, not the same way that polishing or pearling does in the case of pearled barley or pearled farro. Pearling takes off the outer hull, making a grain quicker to cook, but that typically reduces the fiber, too. Barley is said to have so much fiber throughout the grain, not just in the hull, that pearling doesn't reduce fiber as much as with other grains. And yes, that's the really fascinating thing about Watson: It's learning all the time, based on the feedback it gets from users. Right now, Watson has already processed a huge amount of data about things like the science of taste and traditional food pairings. As more people use it, it's also gathering and processing data in almost real-time about people's preferences, which will change the types of things it recommends. (If you're interested, this video is a pretty good explainer of how Watson "learns. Will it ever be quite as good as a human at designing recipes. But as engineers continue improving these computer systems, and as Watson gets "smarter," itself, it definitely seems like a realistic, if distant, possibility. I checked the Penzey's website and H Mart in Merrifield last night, and can also try New Grand Mart and the new grocery in the Eden Center. I've had both, and have been using induction at home for the last year or so (and used it for most of the year I was in Maine). I'm a huge fan, because it's even more responsive than gas and it doesn't create any ambient heat, so it's better during the summer months.
