In the study published Thursday, researchers from the Milken Institute School of Public Health and elsewhere compared isolated samples of K. pneumoniae from meat products sold in Flagstaff, Arizona, and compared those to urine and blood samples... The samples were sequenced and the researchers found that 47% of the meat products tested had the bacteria, and some of the sequenced samples from the meat and samples from the humans were almost identical. The findings underline the need for judicious use of antibiotics in livestock, since some of the strains of K. pneumoniae were discovered to be drug resistant. The study cannot confirm for certain that the people in the study with Klebsiella pneumoniae got the infection from meat at a grocery store. “What we can say is that there are strains that were isolated from people and from meat that were nearly indistinguishable,” said lead study author Lance B. Price, a professor of environmental and occupational health at Milken Institute School of... I made one of these in my big batch o’ pies for Pi Day this year, and had fully intended to post a recipe. Unfortunately, I didn’t take any pictures of this particular pie, since I was concentrating on a few other pies I was baking for the Serious Eats/Instructables Pi Day Pie contest. So, I just had to bake another one. I like the pairing of chocolate and stout, and I think the orange-spiked caramel layer really fills out the flavor of the pie. The pudding itself is based on a recipe from the folks at Cooks Illustrated, tweaked quite a bit, the pie crust is basically a 1:2:3 ratio pie dough but with extra liquid in the form of vodka (which helps make the dough workable, but keeps it from getting tough by providing alcohol to interfere with gluten production), and the caramel and whipped cream are pretty stock recipes (I use variants of both all the time). More of my kitchen experimentation this past weekend. A while back, I realized how much fruit comes across in Peppadew peppers, and thought they'd make a good addition to ice cream, paired with cherries. My first attempt, while edible, was only so-so. In an attempt to infuse the ice cream base with some of the flavor of the Peppadews, I ended up cooking them, and got a taste more akin to roasted red pepper, and lost some of the creamy texture I was going for. So, for this pass, I opted to stick with a mostly-vanilla base, and swap the proportions around a bit, and I'm very pleased with the result, which I think balances the cherries and Peppadews well, with the slightest hint of heat. It's served here on top of a quick apple crisp I made to use up some cinnamon sugar left over from churro dredging (I did a lot of futzing around in the kitchen this past weekend.)
