Review: Omaha restaurant gets its barbecue just right - Omaha World-Herald

At the Fat Shack — a food truck that’s been turned into a brick-and-mortar restaurant at 30th and Weber Streets — 75 percent of the business is takeout, with others making use of the restaurant’s tables: seven inside and two outside. The second sign you’re in a good barbecue joint is the aroma. A blend of sweet, savory and smoky, it mixes with the blues music playing in the background and makes the wait just a bit more longing. When that meat arrives, you know again you’ve found the right spot. Tender brisket — called the best in Omaha last winter by the Food Prowl team — has just the right texture, both firm and melted, and a rich pink ring around its edge, bordered by a bit of fat and a just-crisp, blackened exterior. When one plate of brisket read a touch dry, co-owner and cook Cary Dunn explained that it’s likely the nature of the part of the meat we got that day. The center of the brisket, he said, is more tender, more laced with marbling. The ends of the Texas brisket he rubs with a Texas spice blend are leaner, and those cuts, one of which we did get, are drier. He has customers who prefer both cuts. Ribs cooked low and slow for 18 hours have a lush, dark exterior, created when Dunn sprays the meat with a special blend of pineapple and apple juice, the house-made barbecue sauce, cayenne pepper and red pepper flakes, and lets it all soak in,... Dunn has spent hours revamping and crafting a new three-step process to make the ribs the best he can get them. Ribs, he said, are tricky. You won’t find the house signature dish anywhere else, at least not in the form Dunn first envisioned it, in 2007. The Shack Attack is likely big enough to feed Shaq himself: a mound of hand-cut fries topped with meat — we chose chicken and pork —... There’s juicy, flavorful chicken, pulled into hunks next to pork, just as flavorful but earthier, all covered here and there in cheese and sour cream and sauce. It’s a dish you know you shouldn’t indulge in, and yet once you start, it’s nearly impossible to stop picking through the saucy, creamy, spicy mass of meat and potatoes. It’s not pure barbecue, my dining partners agreed, but it’s creative. Savory sausage made with pork and beef that Dunn brings in from North Carolina has a just-tough-enough, texturally tasty casing. And shrimp is cleaned and butterflied by hand before being dropped in a seasoned batter that enhances its flavor instead of masking it. Another sign of a good barbecue joint: the man behind it. Tonight, after Dunn closes his restaurant, he’ll... Before he goes to bed, between midnight and 1 a. m. , you’ll find him in the driveway. He plays with the settings on his smoker, which he boasts is wood only — no gas or electricity here. He wants to make sure the ribs and brisket he rolls out the next day are just perfect. “My nemesis,” he said, “is consistency. It’s the reason the restaurant’s side dishes are yet another signal that you have walked into a serious barbecue joint. It’s why he takes the time to cut, blanch and cook the restaurant’s excellent french fries to order. He does the same with the fried okra, with its light breading and crisp-tender bite. And the coleslaw, with a finish extra creamy yet refreshingly tangy. And the house-cooked potato chips, warm and with a kettle-chip-style, irresistible crunch. His okra comes from Texas. “I don’t want you to be able to go down the street and get what I have. Dunn tells a story that shows just how much he wants to make Fat Shack a great barbecue joint. This spring Dunn played host to a gala for the members of the Greater Omaha Barbecue Society at the restaurant. Some of the people at the party were fellow pit bosses and restaurant owners. Some were barbecue contest judges. Some just liked to eat barbecue. At the end of the meal, Dunn stood. “I said ‘No doubt about it, when I get my new smoker, I intend to win and take over every category of barbecue in Omaha. If I don’t take that type of pride and seriousness, then I am just the next guy down the street. Mark it: Dunn isn’t just the next guy down the street. He’s the guy who runs what might just be the best barbecue joint in Omaha.
