Isn't it amazing how much better boring veggies tast if you boil them in the water left over from cooking corned beef? I decided to do an experiment to see how well this liquid keeps - here, I'm reducing the liquid down into a reduction that's going to be chilled, fat separated and then frozen. At a later date I'll reconstitute it (probably with a dash of EVOO) and see how well it works. Actually, I'm doing 2 experiments here. Being a messy cook, I'm also seeing how well kraft paper (from a grocery store bag) hold up under a rolling boil on my induction cook-top. I've slow simmered with butcher paper underneath the pots to make cleanup easier, I want to make sure that the paper doesn't disintegrate or catch fire under a heavier thermal load. Worked just fine.
