Pros and cons of induction ranges and cooktops 06/23/15, via ConsumerReports.org

Magnetic cookware, or more accurately, induction-capable, is needed for induction to work. If a magnet strongly sticks to the bottom of the pot, it will work with an induction cooktop. Some stainless-steel cookware is induction-capable, and some isn't.

Nesco PIC-14 Portable Induction Cooktop is user-friendly and energy efficient. Its smooth, ceramic glass top wipes clean with ease. Five different modes with instant temperature adjustements makes cooking virtually fail-safe. And, because the heat is generated in the pan, not the element, less energy is wasted than with gas or electric stoves. Use it in dorm rooms, offices, RVs, outdoors or in the kitchen. How it works: An electric current passing through the induction coil beneath the surface creates an electromagnetic field. The electromagnetic field generates heat directly into ferrous metal cookware placed on the cooktop, bypassing the glass surface. So the pan gets hot - the cooktop doesn't. Features: 1500 watts, instant temperature adjustments, 5 touch controls: melt/wamr, simmer, boil, fry and sear, durable ceramic glass top, top energy efficiency: 36% more efficient than gas stoves, 13% more than electric, safe - cooktop doesn't get hot, comes with test magnet for ferrous metal cookware.

Isn't it amazing how much better boring veggies tast if you boil them in the water left over from cooking corned beef? I decided to do an experiment to see how well this liquid keeps - here, I'm reducing the liquid down into a reduction that's going to be chilled, fat separated and then frozen. At a later date I'll reconstitute it (probably with a dash of EVOO) and see how well it works. Actually, I'm doing 2 experiments here. Being a messy cook, I'm also seeing how well kraft paper (from a grocery store bag) hold up under a rolling boil on my induction cook-top. I've slow simmered with butcher paper underneath the pots to make cleanup easier, I want to make sure that the paper doesn't disintegrate or catch fire under a heavier thermal load. Worked just fine. (Please don't try this at home unless you have an induction cooktop and are using it in induction mode. The cooktop shown here cannot generate heat and the only heat source the paper sees is via conduction from the...
