Here we are in mid-August, with back to school shopping and the weather turning cooler (sometimes) and tomatoes ready to be picked from the garden or bought for a good price. This time of year, I switch to squirrel mode — roasting, saucing, freezing and canning everything I’m able to. The best way to get your hands on gorgeous tomatoes is to find a grower you love and ask for the case price. Early Girls are the all-around favorite for sauces, soups and salads. Romas make salsas sing and take to roasting like no other variety. Little cherry tomatoes taste great out of hand, in salads, broiled on focaccia with pesto and cheese, or sizzled in a pan with garlic, olive oil and fresh herbs for a quick pasta sauce. A 20-pound case should run you between $20-25 for many varieties, up to perhaps $30 a case for others. I find it fun to split cases with friends so that I get more varieties to stash. Let me give you a few key recipes for now, when tomatoes are fresh and in season, as well as a recipe for freezing so you can cook with tomatoes in the dead of winter. Preheat oven to 450 F. Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Sprinkle with garlic, sugar, salt and pepper. Roast for 30-40 minutes, until the tomatoes are shrunken and beginning to caramelize. Serve right away warm or at room temperature with toasted bread, or cool to room temperature and freeze in freezer bags with air sucked out. I like to use quart bags so the roasted tomatoes are portioned and ready to use for sauces, soups or appetizers. Makes 8 servings and about 1 quart. Bring a large pot of water to a boil and season with a palmful of salt so the water tastes salty like the sea. Heat a large sauté pan over medium heat. Add olive oil and butter. When the butter is melted, add onion and sauté until softened, about 5 minutes. Add garlic and sauté for 1 minute. Add thyme leaves, oregano sprig and chili flakes. Sauté until fragrant, about 1 minutes. Add tomatoes and sugar, stirring to coat. Cook until tomatoes begin to break down and brown, releasing their juices, about 15 minutes. As the sauce cooks, boil the pasta, cooking until al dente, so the pasta is still a little firm when you bite it but cooked through. When pasta is done, use tongs to add the pasta to the sauce. Simmer 1 minute, tossing the noodles and sauce together. Season with cheese and sliced basil and toss well. Place in a large pasta bowl and garnish with more Parmesan and basil sprigs. Sauce can be made, then cooled to room temperature, transferred to freezer bags with air removed and frozen up to 6 months. Makes about 2 quarts sauce. Preheat the oven to 375 F. Serves 6-8. Clean as many tomatoes as you want to freeze by rinsing with cold water. Freeze whole, halved or quartered in freezer bags with air removed. This is an especially good idea for cherry tomatoes, which you can put on pizza or mix into soups whole. Use in soups, sauces, whizzed in the blender for salsa or in salad dressings.
